In the books

In the Song of Ice and Fire novels, Aeron Greyjoy presides over Theon's baptism. Given that Aeron "Damphair" Greyjoy is an important character in later books in the series, it is probable that the TV series producers wanted to forgo having to go through a major casting decision until his main storyline begins.
